We sat down with founder Josh Currall to talk about the journey so far, what makes their food so special, their passion for sustainability, and the exciting trends Pickled Pumpkin are bringing to St Tewdrics.

St Tewdrics House:
Congratulations on the incredible growth of Pickled Pumpkin. Take us back to the very beginning – what sparked the idea?

Josh Currall: It all started during lockdown. I began with vegetable boxes, lunch deliveries, private dinners, and then weddings. Lockdown really made Pickled Pumpkin what it is today.

STH: You’ve built an impressive list of residencies at luxury venues across South Wales, including right here at St Tewdrics House. What draws you to our venue in particular?

Josh Currall: We’re highly adaptable in how we work, which has helped us build strong relationships across a range of venues. What draws us to St Tewdrics House is its refined, elegant character; it has a real sense of identity while still giving couples the freedom to make the space their own. It naturally complements a polished, formal dining experience, whilst still working beautifully for more relaxed and interactive styles too.

The spaces are well thought out from a catering perspective too, which allows us to deliver that level of detail and precision while tailoring each event to the couple.

STH: Sustainability is clearly at the heart of everything you do. How does that philosophy play out on a wedding day?

Josh Currall: Sustainability for us is about actively reducing waste across every part of a wedding day, from using by-products creatively in the kitchen to eliminating unnecessary packaging and paper wherever possible – we are now paperless in our office too! We also prioritise reusable serviceware, such as durable trays for street food, instead of single-use items, ensuring a more considered and responsible approach without compromising on presentation or experience

STH: Your food is known for being bold, flavour-driven and interactive. What trends are you most excited about for 2026 weddings here?

Josh Currall: We’re seeing a strong shift toward contemporary social dining; elevated, sharing-style experiences designed to feel both luxurious and immersive. This isn’t as casual or conventional as previous sharing styles; it’s about beautifully curated dishes presented with intention, encouraging connection while delivering real visual impact. Instagram-worthy moments that balance elegance with a sense of occasion.

STH: You’ve recently added the TWIA 2025 and WNWA 2025 titles to your collection. How does Pickled Pumpkin keep pushing the boundaries of creativity?

Josh Currall: Winning titles like TWIA and WNWA is a huge honour, but for us it’s less about the trophies and more about what they represent. Recognition keeps us on our toes! It pushes us to keep evolving rather than standing still. At Pickled Pumpkin, creativity comes from constantly challenging ourselves to do things differently, whether that’s reimagining menus, experimenting with presentation, or tailoring every event so it feels completely personal.

Our track record — from being Welsh National Caterer of the Year since 2022 to consistent wins across hospitality and business growth awards — reflects that mindset. We don’t see success as a finish line; it’s motivation to keep refining, innovating, and raising the bar for every single event we deliver.

STH: We’re seeing a lot of couples moving away from formal three-course meals. Are you seeing a rise in sharing-style dining or street-food concepts?

Josh Currall: Absolutely, social dining and interactive food concepts are becoming increasingly popular, as they create such an engaging experience for guests.

At St Tewdrics, that might look like an interactive sushi bar for arrivals, followed by a colourful social dining wedding breakfast, and street food served from our Pickled Pod to round off the celebrations. We work closely with the venue team to ensure everything feels effortless, but ultimately the menu is always built around the couple.

Every dish can be made bespoke, and we draw on a wide range of influences — from Welsh and British classics to Arabic, Hindu, and fusion styles — creating something that feels both personal and memorable. A great example of that is Yusuf and Samar’s wedding on our website, where we brought together different cultural elements into one cohesive menu.

STH: For couples planning their wedding at St Tewdrics, what’s one piece of advice you’d give when thinking about the food?

Josh Currall: Choose a caterer who will build everything around you and your vision. The food should feel personal, exciting, and completely yours – not an afterthought.

STH: Finally, what’s next for Pickled Pumpkin?

Josh Currall: We’re really focused on continued, sustainable growth, building on what we’ve created in South Wales while expanding further into areas like the Cotswolds. For us, it’s not just about getting bigger, but about always striving to maintain or improve the quality, creativity, and personal approach that defines what we do.

We want to keep strengthening our relationships with venues, evolving our menus, and pushing the experience we offer to couples. If that leads to more recognition along the way, that’s fantastic, but the priority is always delivering exceptional, memorable events for all our clients.
